Ciao travel lovers! If you’re anything like me, you’re always looking for those dreamy spots before they blow up on Instagram. Well, buckle up because I just got back from Puglia, and guess what? I skipped the usual Lecce and Monopoli route I did the first time I visited. Instead, I explored the less crowded north, and it was pure magic.

ToggleI’ve put together a perfect 7-day Puglia hidden gems itinerary, filled with coastal towns, secret swimming spots, salty spa experiences, and charming villages that’ll have your camera working overtime. So, grab a coffee (or an Aperol) and let’s plan your next adventure!
Day One: Arriving in Bari and Soaking Up Local Life
Touch down in Bari and check in at the cool and comfy HiHotel Bari. This place has stylish rooms and, get this, bicycles you can borrow to explore the city. Such a vibe!
Once you’re settled, hop on your bike or the bus and start discovering Bari’s authentic charm.
Where to Eat and Wander in Bari
- Panificio Fiore: If you only eat one thing in Bari, make it the focaccia from this bakery. It’s the real deal, crunchy outside, soft and fluffy inside, dripping in olive oil.
- Pasta Street: Watch nonnas making orecchiette right in the streets of Bari Vecchia. It’s wholesome, it’s real, and it’s the best kind of slow tourism.
- Basilica di San Nicola: This iconic church is a must. Head down to the crypt for that quiet, spiritual moment.
- Bari Cathedral: Another gem, with beautiful architecture and peaceful vibes.
- Castello Normanno-Svevo: Explore the castle for a history fix and some awesome sea views.
Honestly, Bari is underrated. It’s got energy, great food, and that gritty, authentic charm that makes you feel part of it all.
Day Two: Giovinazzo – A Local’s Coastal Secret
Grab your car and in about 45 minutes you’ll reach Giovinazzo, a little seaside treasure where locals swim, laugh, and live life right.
What to Do in Giovinazzo
- Take a morning dip in the clear Adriatic waters. The best spots are quiet, perfect for skinny dipping (shh, your secret’s safe here).
- Wander the quaint streets, admire Romanesque architecture, and soak up the laid-back atmosphere.
- Find a beach bar for a refreshing aperitivo. Watching the sunset here? Chef’s kiss.
Where to stay in Giovinazzo
Check into Saint Martin’s Hotel, with a lovely rooftop perfect for evening drinks under the stars.
Day Three: Salt, Sea, and Spa in Margherita di Savoia
It’s time to head to Margherita di Savoia, but first, make a stop at the famous Saline di Margherita di Savoia, Europe’s largest salt pans.
What Makes This Stop Special
- The pink salt flats are unreal. Think shimmering pools, flamingos in flight, and endless photo ops.
- If you’re a nature fan or photographer, this place is heaven.
After soaking in the salt-pan scenery, indulge yourself at the Terme di Margherita di Savoia. The mineral-rich saltwater is famous for its healing properties. You’ll float, relax, and feel your worries melt away.
Where to Stay:
The spa resort itself is the perfect place to spend the night. Actually, stay two if you can, it’s worth it for full relaxation.
Day Four: Manfredonia – Coastal Charm with Local Flavour
Today, head to Manfredonia, another hidden coastal gem often skipped by tourists.

Dinner Recommendation
Al Dragone. It’s set in a cave and the seafood? Divine. You’ll never forget this meal.
Day Six: Yacht Tour, Seaside Lunch and Peschici
Kick off your morning with a yacht tour from Vieste’s port. There’s nothing like seeing the coastline from the water. Expect hidden coves, cliffs, and a cheeky aperitivo on board.
Lunch at Al Trabucco da Mimì
An absolute must. Dine on the sea, enjoy fresh fish, and watch how locals have fished for generations.
Next Stop: Peschici
Wander this lovely village with white-washed streets and hilltop views before heading to Rodi Garganico, your final overnight stay.
Day Seven: Rodi Garganico & Farewell
This town is a citrus-scented dream! Wander the marina, explore the old town, and if you love lemons and oranges, you’re in luck.
Fun Fact: This is the only citrus-growing region along the Adriatic coast. You’ll spot the famous Femminello lemons and Bionda del Gargano oranges everywhere.
After soaking up the last sun, it’s time to make your way back to Bari Airport, just 2.5 hours away.
